GATOR BITES INGREDIENTS:

1 lb alligator meat (or chicken) cut into 1 inch pieces

1 cup buttermilk

½ cup milk

1 egg

1 cup all-purpose flour

3 TB panko

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon pepper

⅛ teaspoon salt

1 cup vegetable oil divided (for cooking)

SWAMP SAUCE INGREDIENTS:

1 TB cajun seasoning

3 TB mayo

3 TB your preferred hot sauce

2 TB mustard

1 TB Worcestershire sauce

½ teaspoon minced garlic

¼ teaspoon black pepper

GATOR BITES INSTRUCTIONS:

- Combine the alligator meat (or chicken) and buttermilk,

- Stir to coat the alligator meat (or chicken) well.

- Cover and refrigerate at least 24 hours for best results.

- Drain the meat.

- In a shallow bowl, beat the egg and stir in the milk.

- In a separate shallow bowl or dish, combine the flour, cornmeal, powdered sugar, salt, pepper, and paprika.

- Heat about a half of the oil in a large skillet over medium to medium high heat.

- In batches, dip the gator meat (or chicken) into the milk and egg mixture, then into the flour mixture. Cook a few minutes on each side until the gator pieces are browned and the meat is cooked through.

- Continue cooking until all pieces are cooked. Serve with swamp sauce.

SWAMP SAUCE INSTRUCTIONS:

- Combine all ingredients in a small bowl.

- Whisk to combine well.

- Can be refrigerated or served room temperature.

BLACK PEPPER CHICKEN INGREDIENTS:

1 lbs skinless chicken breast cut into bite size cubes

2 tablespoon peanut oil

salt to liking

2 medium size onion cut into 1 inch cubes

2 large size green bell pepper cut into 1 inch cubes

½ teaspoon minced garlic

½ teaspoon minced ginger

1 fresh red/green chili chopped

2 tablespoon cornstarch

¼ teaspoon black pepper freshly ground

MARINADE INGREDIENTS:

¾ teaspoon black pepper freshly ground

4 tablespoons soy sauce

1 tablespoon rice vinegar

½ teaspoon brown sugar

1 teaspoon toasted sesame oil

1 tablespoon cornstarch

2 tablespoon water/chicken broth

BLACK PEPPER CHICKEN INSTRUCTIONS:

Sauce instructions:

- Make the black pepper sauce by whisking together the crushed black pepper, rice vinegar, soy sauce, brown sugar, toasted sesame oil, cornstarch, and water in a bowl until there are no lumps.

Chicken marinade:

- Coat chicken with 1 tablespoon of the sauce, 2 tablespoons of cornstarch, and salt. Set it aside while you prepare the onion, ginger, garlic, and pepper.

Brown the chicken

- Heat a large frying pan until it's hot.

- Add one tablespoon of oil and tilt the pan to spread oil all over.

- Add chicken in a single layer and cook over medium until golden from the bottom. Then flip the chicken cubes over and cook until the chicken begins to brown and is almost cooked through.

-Transfer the chicken to a plate. Make sure not to overcrowd the pan; cook the chicken in batches if needed. Make sure you don’t cook chicken all the way through.

- Add 1 tablespoon oil in the same pan. 

- Add ginger, garlic, and chopped chilies.

- Sauté for 30 seconds. Immediately add onion and bell peppers.

- Stir fry over a high until the vegetables are crisp and tender.

- Combine

- Reduce pan to low. Whisk the sauce to recombine and pour the sauce. Let it simmer for 30 seconds.

- Add the chicken and toss well until warmed through.

FONDANT POTATOES INGREDIENTS:

8-10 small/medium Yukon gold potatoes (peeled)

½ teaspoon sea salt

¼ teaspoon freshly cracked black pepper

2 tablespoons avocado oil

3 tablespoons unsalted butter

3 cloves garlic (peeled)

2 sprigs fresh thyme

1 sprig fresh rosemary

1 cup vegetable broth

Flaky sea salt (for serving)

FONDANT POTATOES INSTRUCTIONS:

- Peel the potatoes. Trim the ends so they are flat, then cut each potato in half crosswise. You should now have 10 flat potato rounds. Place the potatoes in a large bowl and cover with cold water and let sit for 30 minutes.

- Preheat the oven to 400°F and arrange the rack in the middle of the oven.

- Drain the potatoes, rinse with cold water, and pat dry with paper towels. Place them in a dry large bowl and season with the kosher salt, black pepper, paprika, and onion powder.

- Add 2 tablespoons of oil to a large cast-iron pan over medium-high heat. Once the oil is hot, add the potatoes cut-side down in a single layer. Cook until golden brown, about 6 to 7 minutes, flip and cook for 5 more minutes

- Mix the garlic, butter, and 4 sprigs thyme, and 4 sprigs rosemary. Add mixture to potatoes in skillet. Stir and cook until the butter is foaming 2 minutes.

- Add the broth, stir gently.

- Transfer the cast iron skillet to the oven. Bake about 30 to 35 minutes (until potatoes are fork tender).

- Garnish with more fresh thyme and rosemary sprigs before serving, drizzle with the pan juices, and sprinkle parsley on top.

This episode's recipe:

SHRIMP & GRITS

GRITS INGREDIENTS:

2 cups heavy cream

2 cups chicken broth

1/2 teaspoon salt

1 cup stone ground grits (quick grits will work too!)

4 cloves garlic

4 tablespoons butter

1/2 teaspoon pepper

CAJUN SHRIMP INGREDIENTS:

16 ounces large or medium shrimp (peeled, deveined, and tails removed)

2 tablespoons butter

1 tablespoon Louisiana hot sauce

1 teaspoon Cajun seasoning

GRITS INSTRUCTIONS:

- In a pot over medium heat, add milk, chicken broth, and salt. Bring to a boil, then slowly whisk in the grits and minced garlic.

- Reduce heat to medium-low and cook for 20 minutes, whisking frequently.   (If grits begin to stick to pan, reduce heat. If it gets too thick, add a few splashes of milk until it's creamy again.)

- Stir in the butter and pepper.

- Cover and remove from heat.

CAJUN SHRIMP INSTRUCTIONS:

- In a mixing bowl, toss the shrimp with the cajun seasoning.

- Melt the butter in a skillet over medium heat.

- Stir in the hot sauce.

- Distribute the shrimp over the skillet in a single layer. Cook for 2-3 minutes, then flip and cook for 1 additional minute. Remove from heat.

- Spoon grits into a bowl, then top with shrimp and any remaining butter in pan

THIS EPISODE'S RECIPE:

JALAPENO POPPERS 

INGREDIENTS:

12 jalapeño peppers (approximately 3-4 inches long)

1 8-ounce block cream cheese (softened)

1 cup cheddar cheese

1/2 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon pepper

12 slices bacon (do not use thick cut)

cooking spray

INSTRUCTIONS:

· Preheat the oven to 400 degrees. Line a sheet pan with foil or wax paper

· Cut the jalapenos in half lengthwise and use a spoon to scoop out the seeds and ribs.

· In a medium bowl mix together the cream cheese, cheddar cheese, onion powder, salt and pepper.

· Fill each jalapeno half with the cheese mixture.

· Cut the slices of bacon in half crosswise and wrap each pepper half in a slice of bacon, use a toothpick to secure the bacon.

· Bake for 25 mins until bacon looks crispy.
